Double Mango Pico De Gallo

    I found mangoes for 60 cents a piece at the store and immediately thought of this recipe. When I got home I found out why they were so cheap. Looked like they been used as baseballs on the inside, So bruised! Anyway I salvaged enough to make a small portion of this for us to snack on. YUMMY! I served mine with just some chips but this would be great on grilled chicken or served in fish tacos!

    Such a yummy condiment. Picture that with some shrimp tossed with it over a fragrant bed of jasmine rice. Upscale big time. Mango's at $.60 a pop ... you lucky stiff.

    Thanks, guys.... I remember when I made it, Magos were super cheap and in season. As isn't a big secret, I'm not usually a fan of fruit with meats, but I'm getting better about it. hehehe... NOW, I can see this as y'all are describe, too. When I made it, it was just with chips.

    Frankie, yup, soaking raw onions in citrus juice helps take the bite away. I LOVE onions, but I like them raw less and less.... so I do this pretty much any time I'm using raw onions, these days. Makes just enough difference.
