Dutch Baby Casserole

Recipe by Hessen: Dutch Baby Casserole
Mine didn't puff nearly as nice as the recipe pic. Mine puffed all around the edges like a heavy pot will do and didn't get that overall puff the recipe pic shows. And a lot of the butter pooled on top of the casserole. It stuck to the bottom of the dish too.
Followed the recipe exactly. IMHO the Dutch baby comes out just as well in a heavy pan without the sticking trouble. It's just another item to wash making it in a casserole dish.

well, the photo, where it's originally posted, does say this is what it looks like prior to deflating, P7O, so maybe that's why?

The photographer didn't list a recipe...at least I didn't see one... but she tagged it as gluten free, so it likely isn't even be a photo of this particular recipe. :(

Don't know how you tracked the pic down. So it looks like Hessen used a pic not of her own making cause it should have looked very similar to mine. I only wish the dutch babies would come out evenly puffed like the pic. Maybe I should try some baking powder and or soda to keep more puff in the pan.
I snapped my pic fresh out of the oven, pre-deflation.
Thanks for your detective work. This recipe doesn't say a word about being gluten free and isn't looking at the ingredient list.

I'm a researcher... it's easy for me... that one has a copyright right on the photo, too...

and no, that's why I think the recipe doesn't fit the photo...because the photographer lists it as "gluten free" in her tags... it's just frustrating to try to make something and it turns out looking SO different and low and behold, the photo is just a stock or borrowed photo of a similar recipe... at least it would be frustrating to me :)

Do yours puff up IN the oven then deflate? I ask because that photo is literally taken in the oven! hehehe

I don't make them, but I've seen them, and they are NEVER evenly puffed. :)

Mine fall a little afterward but I take my pic less than 5 seconds out of the oven to catch all the puff.
Just got back from looking at all kinds of dutch baby pics and could not match the pic up with any recipe.
I have made a couple of (oven pancakes) that did not puff with the high sides although the pancake did puff.
Used a suggestion in one of the recipe comment sections. Whipped half of the eggs for about 5 minutes with one tablespoon of sugar per egg until they tripled in volume and it took about 2 seconds for the streamer of egg to clear the beaters. Then fold the eggs into the recipe.
Seems to knock down all that puffiness around the edges and makes more of an even puff all over.
Will have to investigate that method further to see if the puff falls. Then maybe some baking powder and or soda if needed to keep the puff.
Think I have a modified dutch baby recipe coming on.

You could write the girl who took the photo, from her blog, and ask her about the recipe she used. :) I'm guessing she didn't submit it TO the recipe, anywhere, she just put it on her own blog... maybe she'll give you some pointers! She lists culinary as one of her interests, so she might be able to help.

I'll be watching to see what you come up with!
