  Recipe by Stalwart: Eggplant Lasagna/saved
  Filling recipe. Good flavor. Nice, with a deep tomato flavor and the oregano flavor prominent.
  I sliced the eggplant the wrong direction. Well you can't unring a bell. Got a chance to test out my new ceramic coated baking sheet.
  Skin is tough to cut through just as advertized. We'll see how it is tomorrow. Had two pieces because my spatula is not a skinny one. Yeah, that's my story and I'm sticking to it.
  My mozzarella had some cheddar blended into it.
