Fluffy Cranberry Bits Biscuits

    A good biscuit recipe.
    It is a sticky dough that requires more than a light dusting of the work board.
    Doubled the recipe and got 18 biscuits with the dough rolled out to a half inch and a 3" biscuit cutter. Rolled out to 1" as the recipe instructs requires a much smaller biscuit cutter. If using a cup or glass to cut the dough as the recipe instructs, I can't see getting 10 biscuits out of this. I disagree whole heartedly with the concept of using a cup or glass to cut the dough. The dull edge of the glass or cup compresses the edge of the biscuit which keeps it from rising to its potential. Any type of cutter must have a sharp edge to get a clean cut without compression. And please do not twist the cutter.
    My biscuits rose from an inch to an inch and a half in addition to the half inch of the raw biscuit. Guess what I'm trying to say is that if the dough were rolled out to 1", per spec, the authors picture should be a biscuit that's 2 to 3 inches tall. So I'm guessing her biscuit is a little more dense than it could be.
    Didn't have any Bourbon Vanilla Sugar but I do have sugar with used vanilla pods and cinnamon sticks in it. That should be a pretty good approximation for substitution. I throw my vanilla and cinnamon pieces in the sugar instead of discarding them. It imparts a wonderful scent.
    My only regret about this recipe is I forgot to include the cranberry bits. They were at the ready, I just forgot. Slid the biscuits in the oven, turned around, and there were the cranberry bits still laying on the counter.
    Didn't use the brand name shortening called out. I have another brand with a butter flavor.
    Baked for 19 minutes.
