Freezer Breakfast Sandwich

    I made 10 of these and froze 6. I love the idea of baking the eggs in the ramekins, BUT I didn't have the right size ramekins..I had a 7 inch and a 16 inch (I think) so I started trying to think of what I could do or use. Then it popped in my head that I had gotten a muffin top pan for Christmas and it would be perfect. Ill post a pic. so you can see what it looks like. Anyway it was the perfect size for the English muffins. I forgot to salt and pepper my first batch of eggs so I had to do it after, but the second batch I remembered :) These are so great, especially with how early Michael has to get up sometimes.     You will have to let me know how you find these (or Michael does) after heating in the microwave. I found mine to be a bit damp and then I would sit them on a paper towel for a couple of minutes and the dampness went away. Kind of like they were all steamy or something and had to "dry out" or something like that.
    I love that gorgeous cheesy picture. :-)

    Pyrex measuring cups should work well too. Common sizes are 1/2c, 3/4c. You can go all out too as ATK does and have very small to very large Pyrex cups for measuring out all their ingredients.

When I started looking up things to make in the muffin top pan today I saw one person saying they use it to make their egg patties for biscuits and I was like, yay, I'm not the only one :P You should definitely get one, they are super cheap and you can make a lot to freeze and the egg pops out really easy! We haven't gotten to the frozen one's yet, probably tomorrow, so thanks for the paper towel tip :)

    FA, I pulled out a couple from the freezer to thaw overnight in the fridge, and they worked very well, no dampness. Very pleased :) I probably could have not even frozen any and gotten them eaten quick enough. Didn't know they would be eaten so fast!

    That's the exact one that I have FA! PSO I think they were mainly invented for the people that only like to eat the tops off of muffins, the crunchier part. But they can be used for a lot of other things. I got it to use for a specific recipe when I was doing Paleo, but now I can't remember what recipe lol!
