Fried Chicken Wings

    Recipe by Noola: Fried Chicken Wings/saved
    Good wings even though they turned out a little darker than golden brown. I had to dial in the oil temperature and amount of wings to get them golden and done too.
    Plenty of breading left over to do another batch and just barely enough egg for this batch. I'm not sure whether the recipe means to call for corn flour or corn starch. I used corn flour (masa harina).
    Heat oil to 350 degrees in a medium sauce pot that brings the oil up half way and cut the wing tips off and separate the drummet from the wing. Cook wings 3 at a time to keep the breading from getting too brown. Maybe 4 at a time (that's 2 wings cut up) would work but don't crowd. Cook for 5 minutes. Oil temp should not drop below 300 degrees.
    Recipe should be modified to reflect time and temperature. The devil is in the details.
    Served these up with a creamy ranch dressing mix.
    Only used half the heat (crushed red pepper) but could have gone ahead and used it all.
