Garlic Lover's Pull Apart Bread

  • pointsevenout 14 years ago
Recipe by Bikenigma: Garlic Lovers Pull Apart Bread/saved
Recipe makes two loaves. Only made half the recipe just in case something was amiss.
Good thing, because I had trouble with the first rise. I finally knocked it down when it barely passed the poke test.
Instead of waiting out a prolonged second rise, I converted it to a focaccia loaf.
Plenty of flavor in this loaf. Definitely a garlic lover's loaf.
I like the heavy slathering on of a buttered herb mixture when the loaf pops out of the oven.
Focaccia turned out well. Will have to make this one again and try and figure out what went wrong.

I wonder if a tablespoon of garlic salt is a bit much for a package of yeast to deal with. Seems like too much salt.

Good catch. Might just very well be so. I was more keyed on halving everything than eyeballing the recipe for obvious errors.

the salt should be okay...this recipe appears to be based on an old KA recipe... her additions are the crushed garlic, garlic powder, Italian seasonings and the topping...so, I don't think salt is the culprit based on successes with the other recipe...

    hmmmmm......

Made this again and hand kneaded this time instead of using a food processor.
Still had a prolonged rise time. Didn't change the recipe ingredient amounts at all. Trying to eliminate a food processor caused problem.
Two hours on first rise and two hours on second rise. Made it in a standard loaf this time instead of the focaccia form the first time. Thirty minutes bake time yielded a darker than golden brown crust and a denser than standard bread flesh. Dough ball while kneading is stiffer than standard dough. Will cut salt by half next time I make this. Posted pics on recipe.
