    Glazed Cornish Hens With Herbal Infusion
    Am always looking for new ways to prepare Game Hens and I adore Thai chili sauce so gave this recipe a whirl for dinner last night.
    It was very yummy. Sooooo juicy! I cooked them for an hour and ten minutes and it was perfect. Loved the Chili sauce basted on the outside of the hens but the next time I'd change up the herbal infusion and try a mix of lemongrass, garlic, ginger, and coriander, as I think that would match up with the glaze a little better.
    But it certainly had nice flavour and there were no complaints. I forgot to add the paprika but don't think it would have made a whole lot of difference. I basted the hens with the chii sauce three times over the course of the cook time. Served with some Edamame sprinkled with Szechuan sea salt.
    All in all a most lovely meal.

    That looks really wonderful, Janet. Seems like pouring the chili sauce on would rinse off the salt, pepper and paprika though but I guess basting would fix that and put at least some of it back on. It looks nice and crispy!

    I really think the recipe is pretty versatile Karen and if you subbed the dill with oregano or whatever I think it'd be just as good. I couldn't actually taste any of the herbs specifically in the Game hens themselves.

    I get my Edamame at Costco Michelle. In a giant box in the frozen food section. Don't quote me but I think there's maybe 8 pkgs. inside? Each pkg. is enough for 3-4 people as a side. You put the plastic pkg. in the microwave for two minutes on high and voila. They're perfect. Hot and steamy and no where near soggy and weird. If we don't end up eating the whole pkg. (and we never do) I just re-heat them in the microwave for a bit the next time or eat them cold as a snack. So good and so good for you.
