Great way to use extra fresh herbs .Cornish hens are very tasty prepared this way. When I mean infused, I mean the fresh herbs are packed in the cavity and they release their flavors during cooking !

I would suggest this alteration , if you want to give it a " haute cuisine " character ( not that it lacks anything , though !! ) : add a 4x4cm slab of your favourite cheese after you have diced it ( French greuyere or Italian pecorino would do wonders ) and a fistful of pine nuts to the filling and then SOWthe chicken's neck and bottom !! You will love it ! How does it sound ?

Cheese sounds good to me! I would perhaps put some riccotta along in with the herbs in the cavity, garlic etc.
And of course an herbal bread stuffing good too!
