    I saw a recipe for champ on a food blog I was looking at and I had never heard of it! I came here and found this one of Pat's so I decided to try it. This was way too onion-y for me and I love onions! But, I also love potatoes and the onions over powered the potatoes. It also needed more salt and pepper. I know that onions get stronger as they sit overnight in food and I don't know if these will be edible or not by tomorrow.
    I would have given it three stars - sorry, Pat! :( - but that rating is "OK. Probably will not make again" but I will make it again - just cut down on the onions and up the salt and pepper. So, I gave it four.
    I also read that traditional champ has more melted butter added in a well on top of the serving so I did that.

    That's too bad it was too oniony. I love green onions in mashed potatoes, but I never measure how much I put in. I only add the green tops though, and save the whites for when I am sautéing something.

I've bookmarked it to try. Am always looking for 'Irish' recipes this time of year and the fact that it's one of Pat's is further incentive. :)
    I won't use Yukon Gold potatoes though. Jim can taste them a mile away and hates them with a capital H. It's the weirdest thing. I've even tried to dupe him before and it never works. :)

    Thank you, everyone. I did make the entire recipe. I like mashed potatoes. :) I think heating them up with the milk probably brings out a stronger onion flavor as the onion infuses the milk. I thought they could use more butter, too, so that is why I did the melted butter well thing.

    Lol Janet at Jim! I don't think I can really taste a whole heck of a lot different from potato to potato! That's hilarious he can pick out Yukon Golds, so strange!

    Funny that your hubby can pick out Yukon Golds, Chuckieb. I can't tell the difference between one potato and another unless it's sweet potatoes!

    I've never been able to tell the difference between potatoes. It would be fun to do a blind taste test with red, Yukon, white and Russets. Maybe I'll do that with my family. We did a blind taste test once - with beer. :-)
