Green Onion Champ Recipe
Buttery mashed potaoes(known as Champ in Ireland)flecked with green onions. Comfort food at its best

Ingredients
  • 7 cups peeled yukon gold potato(about 21/2 lbs
  • 11/4c whole milk
  • 3/4c finely chopped green onions
  • 3Tbs butter
  • 3/4tsp. salt
  • 1/2tsp fresh ground pepper

Directions
  1. Place potato in lg. saucepan;cover with water. Bring to a boil. Reduce heat,and simmer 20 mins or until potato is tender;drain
  2. Combine milk and onions in a small saucepan;bring to a simmer. Cook 3 minutes. Remove from heat.
  3. Combine potato,milk mixture,butter,salt and pepper in a bowl;beat with a mixer at medium speed until smooth.

I like the idea of GREEN onions. Love that chivey flavor. I'm a gravy fiend, but your champs should be enjoyed with just butter on them so the flavor isn't lost.
