Very flavorful and moist chicken ;) Served with a honey mustard dipping sauce.

I will try this using already prepared breadcrumbs like you! Did your daughter critique this recipe?

Hi Gkwillow! She did like it and didn't say a thing ;) lol! She actually didn't even use the sauce, as my husband and I did, and was fine without it! I did use prepared breadcrumbs, but ones that I prepared, and threw in the freezer months ago. Be sure to use a thicker chicken breast halve than I used. Although delicious mine were super thin and the breading was a bit overpowering. Great dipped in the sauce though to counter balance it, glad I made it :)

That looks good ml2c. That honey mustard sauce sounds great, too.

Are bread crumbs supposed to be kept in the freezer?

    That's an absolutely gorgeous photo.
I think if you make your own breadcrumbs you should put them in the freezer. Am I right, ml2c?

That's what I was thinking, too, Frankieanne - that if they are fresh breadcrumbs they would be subject to mold just like a loaf of bread... but if you buy the canned prepared breadcrumbs or panko, no need to freeze if you use by the expiration date. Just like baking powder ;-)

Oh, great. Now breadcrumbs expire, too! ?? <sigh>
    :-D

    Lol! Poor Frankieanne :)

Yes fresh bread crumbs should be kept in the freezer. Gives them a nice long shelf life and they don't even need defrost time. I just smush the bag around and they break apart ;)

So let me see if I got this. You freeze bread crumbs if they're fresh. But to make fresh bread crumbs you have to wait until your bread gets stale? Then you smoosh it all up and then they're fresh again?

This kind process reminds me of something I used to tease my wife about. I used to ask her why she would pluck her eyebrows only to draw them back in. That always got me punched.
