Hot Cakes Pancakes

    A good cake with good lift to it.
    Batter is a little soupy when first mixed but let it set on the counter while the griddle is warming up and the batter gets airy and thick.
    It made 4 cakes. Used the omelet pan to make 6" cakes. Three minutes on the first side and 2 on the second side.
    Added a little nutmeg and cinnamon for flavor. Could be a little sweeter with another Tbl sugar, and maybe some vanilla extract.

    Nice looking stack of pancakes, Points! That looks like a pretty basic pancake recipe that you can dress up with spices, extract, fruit, etc. I think letting the batter sit while the griddle heats up makes the pancakes cook up better. I do that routinely and they come out nice and fluffy.
