saw this recipe when lindsay posted this review and knew i had to try it. i've heard about italian wedding soup for years but had never tried making it.
curious to know why it was named so, i googled it and found that the term 'wedding soup' is a mistranslation of the Italian language phrase "minestra maritata ("married soup")," which is a reference to the fact that green vegetables and meats go well together.
thought that was kind of cool.
and in fact the spinach and the little meatballs go together wonderfully. i loved it. it's a comfort soup for sure....mild broth with flavour packed meatballs and i did sprinkle some parmesan cheese over my bowl prior to serving too which was nice.
i upped the garlic a bit because i love garlic. i used ground chicken to make the meatballs and i ended up only using half the meat mixture as the ratio of meatballs to soup looked good to me and i froze the leftover meatball mixture for my next batch as there certainly will be a next batch. YUM!
i used these little hungarian dumpling noodles for my pasta. hubby was a bit late getting home for lunch so the noodles absorbed a lot of the broth and i ended up adding about another cup and a half of broth as it was really thick.
this is a very nummy soup and i'm so glad i tried it. i'll add this to my regular soup rotation.
thanks linda for a great recipe and thanks lindsay for bringing it to my attention.

Yummy, this was a good one! Okay, so I wanted to make the meatballs Paleo. Well for one I used ground turkey. Instead of the bread slices, I threw in 1/4 cup almond meal and used almond milk. The smallest pasta I had was orzo, so I threw that in there. I fished around the orzo though the best I could while eating and Michael finished off what was left like usual :) Everyone loved it, it was the fastest I have seen Caiden eat dinner in a long time lol. So delicious!

Your soup looks wonderful, Michelle! I love Italian Wedding Soup but I have never made it from scratch. Orzo sounds like a good pasta to use. I love that stuff. :)
I somehow missed the original post on this one! That's not like me. :)

    Wonderful photos!
I love this soup! I'll have to try this recipe soon. I like to make it with the tiny bow tie pasta (Farfalline) I find they hold up well when re-heating. :)
