Incredible Pineapple Filled Cookies

    Gave this a 3-star rating.
    First off it's a biscuit, not a cookie. I was so disappointed.
    It's OK for a biscuit but filled with butter. Yeah, the recipe says oleo but I used butter.
    There is twice as much filling as what's needed.
    Took 30 minutes to bake.
    Rolling out the dough fresh from the fridge has some cracking issues. Maybe letting it set out for 20 minutes at room temp would help, as in pie crust dough.
    Kneading up the scraps from the first cutting made the dough much more workable.
    Might need to wet the edges of the bottom layer, because of all the flour, to make the top layer stick better although I had no issues with the layers sticking together.
    Used 2Tbsp cocoa powder in the icing drizzle for contrast.
    Nothing incredible about this recipe except for the untruth in the title.
    This is destined for some gravy at breakfast.
    Made 20 biscuits. Maybe could have made 24 if I rolled out the dough a little more.
