  OK. I hate the word "veggie." And "EVOO." I guess I am too old for abbreviations of whole words.
  Sorry. Sidetracked. No offense to EVOO veggie lovers. :)
  Trying to use up the tons of vegetables I got from my mother and my tomato plant. I found this using the words "Roma tomatoes" and "cucumber" in an ingredient search and this came up. I had everything except for the bean sprouts but I ain't gonna drive to town for bean sprouts. This was super good. I really loved it.

  Its a filling one. I only grew Roma tomatoes and potatoes this year. I have soooo many potatoes!
