Jules recipe for Chorizo and Kale Soup

  • otterpond 15 years ago
I made this up this morning. It was an "I Love Lucy" moment. I thought I would use my crockpot but when I added the kale I knew that just wasn't going to work out. Had to transfer it to a jumbo sized soup pot. Too funny.

I made some substitutions for what I had on hand. Didn't have any heavy cream so I used evaporated milk and cornstarch for a substitute. Seems to have been okay. I also didn't think it was enough liquid so I used 8 cups of water and 4 cups of wine.

It really came out great. I wish I could share it with the folks but Mom is on a blood thinning drug and the kale is a no-no. I hate that. I say dump the drug and up the vitamin K!

Thanks for the kind words, Otter! So glad you tried the soup and made it your own! The substitutions and even nutrition counts are posted by Otter under the alterations suggestions in that recipe. I especially love the smoked jalapeno worst and cannelini beans there!
