    Spinach And Mushroom Stuffed Pork Loin Ci

    I made this a while back. Way out of my comfort zone when trying to make something. But, it turned out really good. However I had a few problems. The first, due to being hungry, was I kept eating the stuffing. Luckily there was plenty. The second and MOST troubling was when trying to pull off the string that I used to tie it up (construction layout and forming twine), the twine stuck and I pulled 1/2 of the roast off the cutting board which shoved several pieces all over the floor. Needless to say, I spoke out a few colorful metaphors. Very similar to those that introduced me to the taste of soap in my earlier years as a piglet. Still.......I was VERY happy with everything before that. This is a great recipe. Thank you, Keni

    Yeh it was the twine incident. I was robbed. Use no stick spray.....Now you tell me. I shoulda thought about that myself..........Gotta love hindsight

    I'm surprised that the twine stuck.....the recipe does call for basting the outside with oil or butter before cooking. Maybe even basting the twine with oil may have worked.

    Keni, this is one of my go to recipes for when having people over. Tasty and very affordable.

    Wynne, I did baste with olive oil. But I did it after tying it. Dont know it any got underneath though. I think I only did the top which ,might explain the top coming off easy and I just figured the underside would too. But..........I was mistaken = (
