Korean Scallion Pancake W/ Shiitake Mushrooms

    Wonderful as I expected! The batter is similar to a pancake batter but these cook up much differently. They are a nice and chewy and very light in flavor, which pairs nicely with the sauce. These are probably the easiest "pancake" Ive ever made. They are very sturdy. My shiitake's look like bacon in my picture lol! I for some reason didn't put them cut side down I put them top side up, which made them look darker (does that make sense)? Anyway...very good and glad I tried!
