    Lemon And Blueberry Muffins

    These muffins are delicious, light and moist. The flavor of the lemon really compliments the blueberries. I substituted the plain flour by spelt flour and it was perfectly fine.

    Caster sugar has a grain that is in between regular table sugar and powdered sugar. You can put regular table sugar in a food processor and whirl it around for a bit.

    The table sugar works just fine.
    Spelt is a type of grain just like wheat. It is very good and similar to wheat. I find that cakes baked with spelt flour get lighter and fluffier.
