    I wouldn't exactly call these "roasted" although they are certainly baked. There's enough liquid in the mix for them not to have a roasted quality.
    Great lemon honey flavoring makes these carrots delicious.
    We like our carrots "UN" crunchy. So this recipe spent 45 more minutes in the oven, the last 15 minutes covered.
    Looked up other roasted carrot recipes, after the fact, and found out the majority of them did a steam or par-boil step before coating and baking.

    Those look interesting. I've never roasted carrots. I don't know what "dark" honey is though. They sound tasty although I would have to leave out the fennel seeds. I don't care for fennel.

    I see the shade variation of honey when setting on the store shelf. It probably has to do with what flower the bees visit. They take it back to the hive and spit it into their containers for processing.

    The bear container has darker honey. A lot of people get uneasy about honey knowing its concentrated bee spit. :)
