    Recipe by Otterpond: Lemon Pepper Seasoning
    Always a pleasure to my pocketbook to make my own seasoning blends.
    BTW: it took a dozen lemons to make 1/4c dried ground peels.

    I had a small container of store bought lemon pepper seasoning. Order of importance of ingredients were, pepper, salt, citric acid plus a whole host of other eight syllable words. Nowhere was listed lemon.

    I was thinking I could've made more. I have a zester that has 5 little holes in the end of it. Hold it like a potato peeler and scrape those holes against the rind geting long skinny rind strips. Then I process them with my chef's knife like I would when mincing garlic.
    There must be a better way to do it. I think I waste about 50% of the rind because of the strips of peel that is left between the little holes. I'm thinking I could use a potato peeler if I don't take too much pith. Slice then mince them. I'm not about to buy a rind zester. I'[m sure they want an arm and two legs for the price of that specialty tool. Some kind of hardware store rasp might do. I'll have to take a good look at a rind zester then wander up and down the hardware aisle.

When I make marmalade I use that one though. I saw recipes on line where you dry large peels of lemon with a potato peeler, then pulverise in a food processor when dried. I don't have one anymore (it broke) so I used my mortar and pestle to grind it up. I can't remember how much my microplane cost but I bet a wood rasp is a lot cheaper!
