    My zest dried really fast just sitting out at room temperature overnight. I scaled the recipe down to fit the amount of zest I had. And just what I tasted on the tip of my finger is great. And the smell when I grinded it in my mortar and pestle, heaven! Update, made this chicken with the lemon pepper seasoning, divine! more in IMI-->Lemon Rosemary Brined Chicken

    Perfect timing! I used 4 lemons today for the juice, so I zested them first to make this. The zest is drying right now. I'm in a very dry climate, so I'm sure it will be dry by tomorrow and I'll put this together. Thanks for sharing!
