Light Oat Bread

    Recipe by Cheffiona: Light Oat Bread/saved
    Converted to hand kneaded loaf. Fits well in a 9x5 loaf pan. Baked at 400F for 30 minutes.
    Used instant yeast which yields less flavor. My fault.
    Bought a pound of it for cheap and didn't really realize the full implications until later.
    The 1 teaspoon water ingredient should read salt.
    Quick rise times and good oven spring.

    Instant rise doesn't give the yeast enough time to develop flavor in the dough. There is other stuff in instant rise yeast besides yeast. I believe the descending order of yeast is: instant rise, quick rise, bread yeast, regular yeast, sourdough.
