Mandys Carrot Salad
I like recipes with minimum ingredients and easy steps. This one fit the bill easily. It is a typical carrot salad with good flavor but nothing really stood out.
The pineapple was very nice. Note that I used cutup pineapple chunks rather than the crushed as that is what I had and really wanted the pieces to be more noticeable anyway. I had a conversation with the submitter of this recipe about listing quantities. She did graciously correct the carrot amount but not the pineapple. I didn’t measure but used about 1 cup pre-diced pineapple.
I did double the amount of mayonnaise as Mr. Breezy wanted it that way. I don’t think it was too much at all. You can tell from the photos (hers and mine) that there was a dressing difference.
I liked this salad but just felt that it needed something but I couldn’t tell you what that would be. Maybe more pecans or larger chunks of apple???
I debated over the number of “forks” to rate but decided to give her the benefit of the doubt of my taste buds and gave it four.

It definitely has just a few ingredients. I look for that as well. Mayonnaise and pineapple? That is an interesting combination. Your photo does look a lot like the poster's.

I am glad you liked it lovebreezy. My grandma used to put chopped celery and more pecans in it, maybe you would like it better with that. Worth a shot!

Bacon, now that I have to try just for the heck of it! I will let you know what I think about that in a few days.

Ha! Bacon makes anything good! I would definitely leave out the raisins. Did you use any extra seasoning or something? Not sure what you would use actually??
