    I made this in the morning to give it plenty of time to marinate and it was delicious! Fresh veggies with EVOO and lemon juice..fantastic! I used Feta, which added so much flavor, and decided to add a few sliced red onions..I didn't have an English cucumber so I used a regular cucumber..Lovely recipe Joce!

    Michelle, I just served it as a side with grilled chicken. Also, that's why I only had the regular cuke..the English were more than 3 x's the price..I prefer English cucumbers, but unless they are on sale, I don't buy them. I think you will love this salad, really goes well with anything grilled!

    I got around to making this finally! YUM! I marinated for about 5 hours. Is the reason we don't add the tomatoes until the end is because they get mushy? Just curious. I doubled the recipe (everything but the cheese) so I will have more for tomorrow and hopefully the next day :) Used feta and added purple onion. I was afraid of the celery thinking it would be just that overpowering celery taste, but it definitely mellows with the lemon juice. Good stuff Joce!!

    I am delighted you enjoyed it Michelle:) What a lovely looking pic as well:) The reason I add the tomatoes last, is that they absorb the flavours or pickle faster than the other veggies and it makes for a nice combination of different flavours. They won't get mushy unless they are very ripe or soft to begin with. I mentioned adding the cheese last, b/c if you used cheddar cheese or mozzarella cheese, it might get mushy or change its flavour faster. Feta is already pickled in a brine of its own. I doubt if it would make any difference in it putting it in first with the other things? Except it might overpower it a bit more with its salty flavour. Thanks so much for the lovely review:)

    Oh okay, I would have never thought that! I added the feta with all the other stuff and it was still all good the next day and not too salty. Still have a little left that I'm fixing to eat for lunch!!
