Mason Jar Salads

Frankieanne, this came really handy for dinner before an opera rehearsal!

I made a simple vinagrette, then a layer of roasted beets, sliced cucumber, 1 small can of tuna, green olives stuffed with anchovies, arugula and letuce. YUM! What can I say :)

What a good idea with the tuna! Next time I have salmon leftover's I think it would work perfect in this. I go and eat lunch with my daughter at school often and she always want's me to get Sonic (uggh...sorry you Sonic lovers) so this would be perfect for me to whip together to take for myself!
