    Meat Loaf, Al Italiano

    A wonderful recipe from Brenda. I did not do the sauce recommended as I did not have the ingredients this time. I ended up doing 1 1/2 x's the recipe as the beef/pork combo I had allowed me to do so. I divided the recipe into two batches one plan and the other as a brown sugar meatloaf. Family loved it and even DS#1 made sure he was able to take some to work for lunch today. Will be making again and doing the glaze for sure. Thank you Brenda for sharing another wonderful recipe.

    When she posted this I thought, "That is one gorgeous meat loaf!" I had a feeling it would be great. I have a hard time finding ground pork here. I find ground pork made into country sausage but seeing ground pork is rare.

    Can you get Italian sausages FA? I bet you could use that instead of ground pork, and you wouldn't even need the Italian seasoning. I often use that if I can't find ground pork, and just remove the casing. :)

    Your right Bakerme meatloaf does make great sandwiches.

    FA another thought is you could make your own. I have a meat grinder which I do not use enough agree but I think a food process might do the trick just do it in small batches.

    I like mushrooms, but have never added them to meatloaf. My husband will eat them in a few select dishes, but otherwise won't touch 'em.

    America's Test Kitchen says mushrooms add a meatier flavor, but now I can't remember if they used them in hamburgers or meatloaf. I was going to say you could try using a small amount, maybe 2 or 3, but that would be so few it might defeat the purpose!
