How to make it

  • Preheat oven to 350ยบ
  • Add a small amount of oil to a skillet , warm and add the mushrooms, pepper and onion.
  • Cook on med. heat for 3-4 mins or until just soft.
  • Add the garlic and cook until fragrant, about 30 seconds
  • Set aside and let cool.
  • In a large bowl mix the egg, bread crumbs and parsley, mix well.
  • Add the cooled veggies, mix.
  • Add the ground meats and mix, gently.
  • Place the mixture into a loaf pan and form into a loaf shape.
  • Bake for 1 hour and 15 minutes or until the temp is 160 at the thickest part.
  • Drain excess oil occasionally.
  • Brush on the glaze, if using, when the loaf has been in the oven for 45 minutes.
  • Brush again every 10-15 minutes.
  • Let rest, loosely covered with foil, for 10 minutes before cutting.

    Made this for supper last night and it was delicious.
    I did not have Italian seasoning so i used finely chopped rosemary and basil. No bread crumbs so in place of breadcrumbs i used ground up oatmeal.worked out great. I also added some chopped up rosemary and basil to the tomato sauce YUM!!
    When the meat loaf was almost done i took it out of the loaf pan, turned it over on to a cake rack on a foiled lined cookie sheet so
    it would brown up, and it was perfect.
    Wonderful recipe Bren.
    Will make again.

    March 30/16 Wow this is a fantastic meatloaf recipe. I actual did 1 1/2 times the recipe as I had a combo beef/pork package would allow this. Divided into two batches did one without the sauce and the other as a brown sugar/ketchup meatloaf. Family loved it even DS#1 made sure that he could have some for lunch today. Will be making again for sure and next time make sure I have the ingredients to do the sauce recommended here. Thank you Brenda for sharing this wonderful recipes.
