    Meatloaf With Spiced Maple Ketchup

    I made this tonight and doubled the recipe. I got home late and hungry, so the hardest part was waiting a whole hour for it to finish. This was sooo worth the wait. I ate 3/4's of the first loaf. Served with plain ol brown rice. The meatloaf had tons of flavor. Great recipe DT. Thank you

    I like mixing bison meat into my other meats. It firms up the texture overall. This should be a good loaf albeit on the small side. Think I would up the ingredients by at least 50%. At least the meat portions, not necessarily the topping.

    Yeh I had to double the recipe. I dont think I ever use just a pound for anything. I like having leftovers. The sauce was really good. The maple was a great touch. Made extra to put on after it was done, too

    I did forget to say that I didnt use bison meat. I have never had bison meat before, and I would like to try it next time.......and there will be a next time. This was really good. I even had some for lunch on a toasted torta roll. Made a great sandwich.

And I wasn't disappointed...I LOVE moist meatloaf and this was exactly what I was hungry for. The sauce was absolutely deelish...sweet, tangy and a little hot. Used 1 lb ground beef and made the recipe into two loaves. Will be making more sauce for the leftovers... My thanks to you too, DT! :)

    Actually, I've never even seen bison in the grocery store where I shop. The closest I've ever been to bison meat was at Wildlife Prairie Park. Native IL animals like wolves, bison, black bear, elk, cougar, otter, etc. roam free on the thousands of acres in that state park.

    We have a bison ranch about 15 minutes from where I live, gkw. I think that's the only reason it was in our store. It doesn't taste gamey at all. Its very lean. It tastes a lot like beef. You can't really tell much of a difference, I don't think.

I halved the meatloaf recipe (cut back on the milk just a bit so I could use the whole egg) but made the whole recipe of the sauce. I didn't put red pepper flakes in it because I wanted to see what maple syrup does for ketchup! Very good. I think I may use some of the sauce on a burger this weekend! Very nice recipe, DT. Oh, the two little pieces that Sammy ate made his tail wag. :)

    On bison...it does taste like beef to me it's just more lean so if used on its own needs to be watched more closely for getting dried out but mixed with beef makes a good and more healthful combo.
