Mexican Skillet Chicken
I liked to do searches here once in a while using odd things like "mini" or "two" or "cast iron" to see what pops up. Yesterday I did "skillet chicken" and found this. Then, remembering I had some flour tortillas to use up, decided to make this for burrito filling for dinners for the coming work week. Super easy and super quick and I always have this kind of stuff around. I think this will be great with some shredded cheese and maybe some onions for burritos. My substitutions and more details are on the recipe page.

Oddly enough, I've never tried searching for recipes by putting in keywords, and just try recipes others recommend. I ought to give it a try.

The ingredient search is great too, I find different recipes can pop up even if you searched with specific keywords in the title. This site can funny like that ;)

This made some really great burritos. I am afraid to say I had two. :) I didn't have enough natural light for a picture.

I needed something I could throw together quick and eat quick and this was perfect!! I actually had all the right ingredients, and even some homemade salsa, but I forgot to top with the cilantro! :( But no worries because I served it with Cilantro Lime Rice which I mixed it all together with the chicken skillet so it's like it had cilantro in it the whole time :P Loved this!!
