How to make it

  • Mix chili powder, salt & pepper. Sprinkle evenly over both sides of chicken.
  • Heat oil in skillet over medium heat. Cook chicken in oil 8 to 10 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut.
  • Stir in beans corn and salsa. Heat to boiling, reduce heat , cover and simmer for 5 minutes or until vegetables are hot.
  • Sprinkle with cilantro.

    This is such a great dish to just throw together in a hurry! I would think that any brand salsa would work great in this but I had some homemade on hand so that's what I used :) It was fantastic and perfect served with Cilantro Lime Rice A little more in FA's IMI review below :)

    I did this up a little differently due to ingredients on hand and I wanted to use this for burritos. I only had two chicken breasts so I halved the other ingredients, using a can of Baja corn and a can of kidney beans I had and I diced up the chicken. I also used chipotle chili powder. I heated everything uncovered as I wanted the liquid in the mix to disappear. I plan on using this with "Mexican style" rice in burritos but I had a bit for lunch. Very good! Added to IMI on 9/11/16.
