Mexican Skillet Chicken Recipe
This is one of our favorite one dish meals. I use medium picante sauce, but could spice it with the hot version.

Ingredients
  • 2 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 boneless skinless chicken breasts
  • 1 Tbsp vegetable oil
  • 2 cans black beans, rinsed and drained
  • 2 cups frozen whole kernel corn
  • 2/3 cup thick & hearty salsa
  • Chopped fresh cilantro

Directions
  1. Mix chili powder, salt & pepper. Sprinkle evenly over both sides of chicken.
  2. Heat oil in skillet over medium heat. Cook chicken in oil 8 to 10 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut.
  3. Stir in beans corn and salsa. Heat to boiling, reduce heat , cover and simmer for 5 minutes or until vegetables are hot.
  4. Sprinkle with cilantro.
