Mexican Skillet Chicken

- 2 tsp chili powder shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 4 boneless skinless chicken breasts shopping list
- 1 Tbsp vegetable oil shopping list
- 2 cans black beans, rinsed and drained shopping list
- 2 cups frozen whole kernel corn shopping list
- 2/3 cup thick & hearty salsa shopping list
- Chopped fresh cilantro shopping list
How to make it
- Mix chili powder, salt & pepper. Sprinkle evenly over both sides of chicken.
- Heat oil in skillet over medium heat. Cook chicken in oil 8 to 10 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut.
- Stir in beans corn and salsa. Heat to boiling, reduce heat , cover and simmer for 5 minutes or until vegetables are hot.
- Sprinkle with cilantro.

This is such a great dish to just throw together in a hurry! I would think that any brand salsa would work great in this but I had some homemade on hand so that's what I used :) It was fantastic and perfect served with more
