Cilantro-Lime Rice Recipe
This is similar to that served at Chipotle restaurant. It is suprisingly good. Great with Mexican food, and also Indian.

Ingredients
  • 3 tsp butter
  • 2 TBS lime (approximate - I usually use 1/2 lime per 2 servings)
  • 1 cup basmati rice
  • 1 1/2 cups water
  • 3 TBS chopped cilantro (or more)

Directions
  1. Melt butter in saucepan over medium heat.
  2. Add lime and rice, fry for 1-2 minutes.
  3. Add water and bring to a boil.
  4. Reduce heat, and cook, covered, until tunnels form in rice and water is fully absorbed. (You may need to add more water.)
  5. Add cilantro and serve.

i forget how much butter is in indian food....
it's enough to make you think twice...
it would be so good for you otherwise..

You can also use olive or veg oil for frying, but I think the butter is more delicious!

I make this all the time with just about the same recipe, except I also squeeze a little fresh lime in it when I add the cilantro at the end, gives it that zing. Also I use water:rice at 2:1 ratio. We like it much better than your typical "mexican rice". And in our house Basmati is the only way to go! Great post.


Good idea, I'll try putting more lime in at the end next time. Yum.


Looks great. Will have with my grilled cumin chicken with fresh tomatillo sauce tomorrow.
