This is similar to that served at Chipotle restaurant. It is suprisingly good. Great with Mexican food, and also Indian.

You can also use olive or veg oil for frying, but I think the butter is more delicious!

I make this all the time with just about the same recipe, except I also squeeze a little fresh lime in it when I add the cilantro at the end, gives it that zing. Also I use water:rice at 2:1 ratio. We like it much better than your typical "mexican rice". And in our house Basmati is the only way to go! Great post.
