Ingredients

How to make it

  • Melt butter in saucepan over medium heat.
  • Add lime and rice, fry for 1-2 minutes.
  • Add water and bring to a boil.
  • Reduce heat, and cook, covered, until tunnels form in rice and water is fully absorbed. (You may need to add more water.)
  • Add cilantro and serve.

    I make this all the time with just about the same recipe, except I also squeeze a little fresh lime in it when I add the cilantro at the end, gives it that zing. Also I use water:rice at 2:1 ratio. We like it much better than your typical "mexican rice". And in our house Basmati is the only way to go! Great post.

    You can also use olive or veg oil for frying, but I think the butter is more delicious!
