Cilantro Lime Rice

    I forgot how much I love basmati rice, it just has such a great texture and I love the look of it :) So I ditched the butter and just used some olive oil, probably not 3 tsp. but what looked good eyeballing it. I also dropped in one bouillon cube in just for a little extra flavor. This definitely definitely would have needed salt without it, even if I had used the butter. My limes were small so I ended up using about 3 limes total. Not sure how much it was but I just squeezed and tasted until I was happy :) Oh and the serving size on this is not 2 servings unless you are eating only this for your meal. It's more like 4 for a nice size side dish. Regardless, we enjoyed!

    Thanks everyone! I love to hear who hates cilantro and who likes it lol. I think FA, your the first person I've ever heard of who went from a hater, to kind of liking it. Nadine I maybe used a tad bit more water than called for but not much. The ratio was pretty spot on :)

    Looks great Michelle! Good call on adding chicken broth for flavor. I think adding lime zest to the rice while it's cooking would help with more flavour and perhaps add some cilantro stems/roots too! :)

    I never think of adding the zest unless the recipe calls for it Shona. That really would have made this pop even more and probably would have saved me a lime or 2 lol.

    I went from hating cilantro to loving it. If a recipe called for it, I would add just a little bit so I could say that I did and at least give it a fair review. Then I found myself adding more each time. Now I love it!
