Mississippi Sweet Potato Rolls

    Recipe by Chefjeb: Mississippi Sweet Potato Rolls
    Recipe came out exactly as described. Mild sweet potato flavor. It's good with lots of butter slathered on.
    It's a supple dough and on the sticky side. Although I eyeballed the cup and a half potato ingredient.
    Makes a lot. I made 16 large buns on two baking sheets that had to be rotated mid way through baking. Twenty five minutes total bake time.

    It's orange and looks like a roll. : )
    It is hard to tell when the rolls have a light brown finish from the oven because of the overall orange color.

    Gave me a chance to measure out the sweet potatoes so I'd get the recipe just right. And yes it is a sticky dough.
    Work with just a little flour for the hands and work surface while kneading, adding more as necessary.
    Replaced one cup of bread flour with white whole wheat flour just to try it.
    Turned out well again.
    Made 24 rolls this time.
