As promised to ML2C, I made this this weekend for a VERY early breakfast, or LATE dinner depending on how you look at it. (Not really a morning egg breakfast person. Love them more for lunch or dinner) I didnt completely read thru all the directions and realized that it called for curry. Im not much of a curry fan, so I subbed smoked paprika and turmeric. I also used a cayenne pepper and a whole red bell pepper. Awesome meal, mom. Thank you. Oh and I used 2 eggs.......

It was after midnight, tho. If I eat big late at night, I wake up being hungry all day. And thats a PITA

So glad you made this! It's really one of my faves and I do admit I hardly ever make it for breakfast either...takes too much time. I make it for lunch or a "late" breakfast. Frankie I have the opposite problem which is I sleep SO good with a full belly, so I have to force myself not to munch on stuff before bed...I'd be 50 lbs heavier if I gave in...

And no, Mom, there was no cat hair in this. My daughter stayed with me for a month several weeks back. She saw this coffee cup and said I had to have it. Guess my Dufas cat has his hair everywhere according to her.
