How to make it

  • Heat oil in skillet over med high heat. Add onions, bell pepper, and poblano. Stir fry about 2 minutes, and turn the heat down to low to medium low and cook about 20 minutes.
  • Add the garlic curry powder, brown sugar, red pepper flakes and some S&P. Cook until nice and very dark browned ( not burned) about 20 more minutes ( I say on low, but it depends on your stove).
  • Taste at the end and add more S&P to taste. Plate and top with you desired egg and chopped green onions..OMG so good!!!
  • **I moved everything over in pan and cooked my egg over easy in it. Just less stuff to wash and it adds a pretty yellow color to your egg, which looks brown in my picture though :) Oh well!

    Mom, made this very late last night. I subbed out the curry for smoked paprika and turmeric. Not much of a curry fan. Hope that doesnt alter the dish too much. Loved this. Added to IMI Ml2cs Caramelized Onions And Peppers Indian Style
