    Marmalade Glazed Chicken Caramelized Onions

    Great recipe. Very easy and quick but with plenty of flavor.

    I did do this seperately because I was making so many of them, so I didn't quite get the color on the chicken, but, they were moist and delicious and, once the chicken was done and the onions were cooked down, I did transfer everything to one pan and they cooked together beautifully.

    I put these on buns, too, and some wanted tomato. We didn't add anything else. Could have used a touch of acid, like with a dash of lemon juice, but it didn't need it.

When you say use a touch of acid, do you mean while cooking, or splash on after? And what does "acid" do when added to a recipe. Does it add or remove a flavor or something? Your pic looks great. Makes me want to make it again. I'll try the lemon juice, too. Thanks again

Good morning. :) Acids make everything "brighter" and brings out flavors and adds just that touch of a bite on the tongue which seems to open up the taste buds for all the rest of the flavors. :) These didn't NEED it, but it would have added just a bit of something, I think. I use fresh lemons or limes on a daily basis but rarely vinegar....but they all accomplish the same thing. Some might have added a bit of vinegar to the onions....balsamic, maybe, to play with the sweet, but, for me, it would have been lemon juice on both sides of the chicken before the last flip...or, just mixed in with the fruit... :) again, don't misunderstand, it's not necessary and these were gobbled up and asked for again! :)
