Nice pie. Guess I could have used a deep dish pie plate, as the filling mounded up a little. But I didn't mind. Only thing that would make this better is a ring of chocolate morsels around the perimeter of the pie.
Froze for an hour and the filling is cold but still soft. I'll check back in the morning.
Doubled the recipe so I could use the whole 8oz block of cream cheese. Two pies are always better than one. : = )

Set up harder after a night in the freezer but still sliceable.

It has the full flavor of peanut butter but is light because of the whipped cream. And it's almost like eating ice cream when well frozen.

It's quite firm straight out of the freezer. A knife held under the hot water tap will help cut through the pie.
Going to have to stay away from this recipe as it will run my blood-sugar reading through the roof. Mother is the lucky one here. Besides, peanutbutter and graham crackers are some of her favorites.
