Notyourmomma's Layered Penne

    I made Notyourmomma's Layered Penne With Ham Mushrooms And Peas last night. Tina had actually recommended the recipe to me as I had purchased a deli meat last week called Lachsschinken and I was looking for something interesting to do with it. Lachsschinken is a cured pork tenderloin that has been smoked in maple and alder for 18 hrs. and it's known as 'salmon ham' as it tastes very much like smoked salmon.
    This casserole makes a lot. I divvied the recipe in two as my son is Vegetarian and for his I just subbed the chicken broth with veggie broth, didn't add the ham and I did add some spinach. He loved it and went back for seconds.
    I'm not a fan of penne so used a pasta called Orogiallo. This is a very flavourful dish and makes quite a decadent meal with all the different cheeses and veggies. Really liked the sauce. Easy to put together and all round 5 forks!
