    Recipe: Old Fashioned Cucumber Sandwiches

    Cucumbers are in full swing! They are hubby’s favorite (not mine) and I wanted to make something different for him. I know this is supposed to be a canapé type appetizer, but I was thinking of a colorful sandwich to go with a bowl of French onion soup. Hubby was so surprised as he’d never heard of a cucumber sandwich. He said it was fantastic and I’ve made several for him since. I'll admit that I didn't try it, but they reminded me of something my mom would eat back in the day only she would have used butter. We called it depression era food.

    When I saw the title of your post, I immediately thought of afternoon tea. I love love love cucumbers! Your photo looks fantastic and I could "taste" the sammiches just from looking at it ;) It looks like you sliced the cukes instead of grating them and used whole grain bread instead of white. Both ideas sound good!

    Lovely pictures DIZ3. I've never eaten a cucumber sandwich but as Bakerme said, I too instantly thought of "Afternoon tea". Perhaps I should give these a whirl. I have some fresh dill in the fridge to use up. Thanks for sharing!

    Thank You, Everyone! Bakerme, I double checked the recipe because I didn't recall it saying to grate the cucumbers. It just says to slice thin. You are correct about the whole grain bread. Makes for better sandwiches!

    LindaLMT, the bread is Wholesome Harvest--9 grain & seed. It's sold in the bakery section and I've found it at Hyvee and Dillons(Kroger owned). It's so good! Soft, but also chewy. We use it for everything including PB&Js. Hubby is very picky when it comes to bread. He doesn't care for any white sandwich bread, bread that is soft and soggy, or bread that is sweet. Every time we've moved, the biggest pain is trying to find an acceptable bread.

    They sell it at Sam's and it has the best texture ever. But of course Michael and Caiden hate it but luckily my mini me Bri loves it :) Now I want a cucumber sandwich!! Lovely picture Diz!

    I've never seen cucumber sandwiches made with just mayo before! My Gran always made it with cream cheese, a little mayo and seasonings depending...like lemon with dill, or onion and garlic etc. She absolutely insisted on white bread with the crusts cut off!! ;)
    I love grainy bread though, my kids have never even had white bread before.(In Canada I get the Silver Hills Bakery, Sprouted or Squirrelly bread) I'm sure the cream cheese was meant to keep the soft white bread from getting soggy, I'll have to try it this way with the grainy bread and see if I miss the cream cheese!

    Whoops, sorry, DIZ, but I got the parts about grating the onion and slicing the cucumber mixed up! Minus the onion, I like to do something similar and make tomato sammiches. I love 'em, but I just can't convince my husband to try one.
