    Orange Pancakes
Cleaning out the refrigerator today found a bit of orange juice in a bottle. Had some milk to use up, too, so I did a search using those two ingredients. This came up in the list. I cut the recipe in half and got five 5" pancakes. Had one to taste and will freeze the rest. There was indeed a tad bit of orange to them!

What is that on the headliner pic? Looks like pineapple bits.

Yeah, looks like pineapple to me, too. I'd say its not the poster's picture anyway.

No, I had leftover Honey Roasted Chicken for dinner. I froze these. Sister is coming this weekend and I thought they may come in handy. :)
These seemed fluffier than other pancakes I have had. Not certain if it was the juice or my imagination. :)

Start out with a cup of OJ and reduce it down to a 1/2 cup to concentrate the flavor and add the orange peel zest. It will kick up the orange flavor.
If you're using bottled OJ make sure it's not full of high fructose corn syrup. But then where would you get the orange zest!

I always use Simply Orange, pso, so no corn syrup. And no zest either! :-P Your idea sounds like a good one!
