    The texture of this breading is very, very much like fried chicken. I'll bet no one would know the difference. However, I would add some garlic powder and black pepper next time. Maybe some paprika as well. So, for that, I gave it four stars. I had a thigh and drumstick - didn't use breasts.
    I think I've come to the conclusion that oven fried chicken that is the most like pan fried has flour for the coating and is turned halfway through. But - I have more chicken soaking in buttermilk to try another recipe tomorrow.

    I think fried chicken needs skin. It helps hold the breading and I think it keeps the chicken juicy. Some people think it actually makes the chicken "better" for you as the skin keeps the meat away from the actual fat its cooking in. I suppose chicken skin is kind of like a Big Mac - it doesn't hurt to have one once in a while. :-P
    Tried this cold. It definitely needs more spices but its definitely like pan fried chicken.

    Yes, I am looking for a great oven fried chicken recipe. I love fried chicken, but hate the mess it makes to the stovetop and all that grease being poured down the drain. I'm trying another one tonight.
