Ingredients
  • 4 chicken breast
  • 1 stick butter
  • 1 C. flour
  • 1 Tbs. season salt
  • Enough buttermilk to cover chicken in bowl
  • SOAK CHICKEN IN BUTTERMILK 25 MINUTES

Directions
  1. Preheat oven to 400°
  2. Spray large baking dish or pan with cooking spray.
  3. Put butter in dish and place in hot oven to melt.
  4. Put salt and flour into a gallon size bag and shake to combine.
  5. Take out one piece of chicken at a time from buttermilk and shake off excess then put into bag and shake to coat well.
  6. Then place into butter in baking dish.
  7. Repeat with other pieces.
  8. Bake 25 minutes then turn over and bake 30 minutes or until juices run clear and chicken is browned.

I made this tonight, but added paprika and fried in oil and it was THE best fried chicken we ever had. It was so crunchy and crispy on the outside and moist and tender on the inside. My 5 year old daughter had thirds and she never does that!! I Loved this--thanks. And I will do it in the oven sometime too!!! Always, Tami

Interesting (but very Southern) Twist on the usual oven fried chicken I make. Never thought of soaking in buttermilk first, and I will continue to use a whole cut up fryer as I am crazy about the thighs. Thanks for the twist.
