    Oven Roasted Tomatoes

    I'm kind of up in the air over this recipe. I'm not sure it is worth using all day oven POWER for the end result.

    I can see where there are several ways to process the tomatoes, maybe mine was just not right.

    Halved and seasoned the tomatoes. Roasted them for at least 9 hours at 175 degrees, face up.

    Tomatoes came out very juicy. Flavors were good but I was under the impression these were supposed to come out somewhat on the dehydrated side. I guess making slices out of the tomatoes first would have helped the drying process or baking them skin side up to let the juice come out. The olive oil all slid off the halves and would up just laying in the bottom of the baking tray.

    Ate some hot. Ate some cold the next day. I'm going to wind up eating these like oysters on the half shell when I pass by the fridge and feel a hunger pang.

    To be redundant, the flavors are alright but the co$t of leaving the oven on all day is a large detractor to me making this recipe again.

    Yes Points....if the tomatoes were sliced very thin, they would of been more dehydrated after about 8 or 9 hours. I used to make tons of beef jerky using a dehydrator and the meat had to be sliced very thin. The trays of the dehydrator were also vented and the unit had a fan circulating the warm air. I used that thing so much I killed the motor!

I would have never expected them to be like "dehydrated", especially if you are adding olive oil. Think about meat, roast it low and slow makes it tener and juice. Tomaotes are much juicier to begin with. I think this would be more for using them in a homemade tomato sauce... I love them this way, and some shceese sprinkled on top is awesome!
