Peetabear's Cuban Black beans bacon and rice

    Had this for lunch. I LOVED it. Bacon, onions, garlic, beans and rice......how could I not? I did stray a bit. Maybe a lot. I used a can of black beans and leftover rice which saved tons of time. It prolly came out more dry than had I followd the recipe, but I loved it as it is. I used 1 15oz can, 1.5 cups cooked rice, 3 pieces of bacon (cooked crispy like all bacon should be), no liquid, all in a 12"CI skillet, then followed the recipe amounts after that. This made 2 bowls. Thanks Peetabear for a great recipe

    I wonder, too, tho. I think the bacon added quite a bit, Small chewy bits of goodness : ) Is it pork that you dont eat, or the flavor of bacon you dont like, NP?
