I made this (it is in the oven right now) with a few adjustments for convenience. I used frozen pie crusts and for the thyme steeped cream I substituted sprinkling dried thyme over the layers of potatoes along with the salt and pepper. I increased both the bacon and the cheese to suit the tastes of my family. I am hopeful that it will turn out well as it certainly looks, smells and sounds wonderful.
The link is Potato Bacon Torte and it turned out well but maybe a bit dry. I tried a slice warmed up this morning with maple syrup on it (like I do with tourtiere) and it was excellent - just a bit of sweetness and moisture to wake it up. I used more gruyere than was called for and I think that was a good idea because we all like the flavour of the cheese in it.
