Prickly Pear Margarita

    This is a must try for any margarita lover. I know I’ve told the story before, but I’ll tell it again. The first time I had a prickly pear margarita was at a trendy restaurant in the Las Vegas airport. I had several hours before I had to catch my plane and what better place to wait it out than in a bar. Their signature drink was a prickly pear margarita. I’d never had a prickly pear before, much less even heard of one. Margaritas are my passion and I’d never let a new opportunity pass me by. You should have seen my face when the waitress brought me the drink. It was a gorgeous dark purple drink (my favorite color) and it was served in a tall fluted glass. It was a whole new experience and one that has stuck with me forever. Thank goodness I had a plane to catch or I would have had one right after the other. This recipe is exactly as I remember!

    LindaLMT, prickly pear anything is pretty much non-exist around here. I actually used prickly pear "syrup" that I found on Amazon and it's sweetened with cane sugar. It's pretty spendy for a little bottle, but this is my once a summer treat. I see the submitter says she gets frozen juice so I might look in the freezer section or juice isle and see what I can find. I don't think I would want to use fresh fruit or juice that is unsweetened. Might be pretty tart with the lime juice.

    And the search is on ... went to the grocery store yesterday and looked for anything prickly pear and couldn't find the actual fruit or juice. I did not look in the frozen section so will have to do that. If I can't find it I'll order some. Your picture really has me wanting one!

    LindaLMT, another place you might try is a natural foods store. I've never looked, but I know my MIL says they carry a lot of things like that. As far as Amazon, I get Cheri's Prickly Pear Syrup.
