Pumpkin Cake With Cream Cheese Frosting

    Made this today and it is delicious. I doubled the recipe and got 3 lovely loaves.

    DIZ, cake rolls are something I've never tried. They look kinda tricky to make and, with a dexterity problem, I'm afraid I'd have a heckuva time rolling the cake without it breaking.

The pumpkin roll sounds good too Diz, is the cream cheese mixture mixed with whipped cream? I made a pumpkin roll with a mascarpone whipped filling once, it was yummy. The last few years I've been on a pumpkin-chocolate craze, a pumpkin cake with a dark chocolate ganache, pumpkin cheesecake with a chocolate crust and chocolate sauce, pumpkin chocolate swirl bread etc...but I will definitely try this out before year end :)

    Bakerme, the pumpkin rolls are very easy, If I can do it, anyone can! All you need is a pastry towel. When the cake is hot, you dust it with powdered sugar and turn it onto the towel. Dust the back side, then use the towel to roll it up. It rolls up easily. When it cools, unroll it, frost, and roll back up again.

    Bakerme, I should clarify that when you roll it up, you roll the towel inside the cake so it separates the layers. Otherwise, the cake would stick together and you would never get it apart. Somewhere, I have photos of the rolling process.

    I'm not a baker at all and I totally envy y'all who can roll up sponge cakes in powdered sugar towels. I don't think I am that brave.

    Frankie, you can easily halve the recipe and bake it in an 8-inch square pan. Just halve all the ingredients except the salt; leave that at 1/2 tsp. In fact, the original recipe was for a smaller pan and I doubled it to make a larger cake. You can also easily halve the frosting, too. Bet your friends at work would love it! (Thursday is the first day of autumn - autumn, pumpkin hint hint ;)) Sometimes I don't feel like dragging out my stand mixer and just mix everything together with a whisk and that works just fine.

    Mommyluvs2cook, if you add the cream cheese frosting, I think I would drizzle it over the tops of the loaves instead of frosting them. A nice drizzle looks pretty, too, and it might be easier to wrap the loaves in plastic wrap without sticking.

    Manella, your idea has me wanting to try the cake as loaves with a cream cheese drizzle on top. :)
