    I had a little problem baking this. I cooked it about 15-20 minutes longer because it was still doughy every time I checked it. It could be the higher altitude here or that my pan was only 8x5 and not 9x5.
    The flour was hard to fold in because the wet ingredients were so sticky, so I was worried I over worked the dough, but it rose beautifully!! Phew ;)
    As a base it's a great recipe that could benefit from some add ins like cranberries, pecans, candied ginger etc.
    And boy does it smell good while baking. Your house smells like Christmas!
    I'd like to try it again with some pecans or cranberries :)
    ~Update~ The next day, it is much more moist than I first thought and the spices really come through and is so much more flavorful! This is one of those loaves that taste better the next day, so you'll want to make it ahead! :)
